Cooking with Corrie
Today I decided that I would try a new recipe, which was recommended to me by a friend of mine
The recipe : Butternut Squash Manicotti

The Ingredients
Gotta love Ricotta Beautiful Butternut Squash
I chopped up the squash and added onion and olive oil, lemon juice, and spices!
Lots and lots of dishes
After the squash had baked for 45 minutes, i took them out and made puree
I added the Ricotta Cheese, Mozzarella Cheese, Parmesan Cheese, and eggs!
Cooking the pasta and steaming up some spinach.
After steaming, I add it to the creamed up cheese mixture
Ready to be stuffed in the shells
The shells are all stuffed, and covered with sauce and cheese
Yum!
Dinner is Served!

Yup its been downright cold here. Mom had to buy some long underwear around Christmas time and they help a lot. Extra layer & all, you know.
Post some pictures of your trip soon, so we can drool & be all jealous & stuff.
